1 bag rocket leaves
1-2 pears, sliced
1/3 cup olive oil
2 1/2 tbs fresh lemon juice
1 tsp caster sugar
1 tsp Dijon mustard
salt and pepper (optional)
Combine the washed rocket leaves and pears in a salad bowl. To make the dressing, place all the ingredients in a small screw-top jar and shake well until well blended. Pour over salad and toss. Grate over the parmesan cheese.
