Mushrooms and Rainbow Chard on Toast Ingredients
- Serves 2
- Half a bunch of rainbow chard (or silverbeet or english spinach if chard not available)
- 200g mushroom cups or flats
- Half a bunch of fresh flat parsley
- Coconut oil
- Mixed organic seasoning
- 4 slices organic bread
Mushrooms and Rainbow Chard on Toast Method
In a frying pan, add a knob of coconut oil and heat to medium heat until oil melts. Dice the mushrooms and add to pan for 3-4 minutes. Wash and dice the chard, including the stalks, and add to the pan with the mixed organic seasoning for another 3-4 minutes, until mushrooms and chard soften.
Finely dice the parsley and add to the pan for no more than a minute. Serve immediately on buttered toast. Yum!!
