A favourite dish for any time of the year, absolutely delicious
1-2 fillets salmon
1 clove garlic
2 tins chopped tomato
1 Pkt pasta
Saute chopped onions and garlic in a little olive oil in a large pot and over a gentle heat. When colour is translucent, pour in the tinned tomatoes. Add a good glug of Balsamic Vinegar and let simmer on a very gentle heat for 2-3 hours until thick. Add seasoning and parsley. In the meantime, add butter and oil to pan and fry the salmon until cooked through. Cook the pasta.
Once the salmon is done, flake and add to the pasta sauce, give it a good stir. Pour sauce over the cooked, drained pasta and stir. Serve immediately with a little sprinkled cheese on top. Delicious - thanks Jodi!
