These are light and delicious, an absolute treat for breakfast, or an any time of day yummy snack!
2 mashed bananas
1 cup milk
1 cup rice flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
1/4 teaspoon cinnamon (optional)
1/4 teaspoon pure vanilla extract (optional)
Combine bananas, egg and milk (and vanilla essence if using) in a bowl. In a separate bowl, combine flour, baking powder, salt, sugar and cinnamon (if using).
Make a well in the centre of the flour mixture and slowly whisk in wet ingredients whisking the whole time. Once the ingredients are blended in, add oil to the heated pan and spoon in enough batter to fill the pan, but not too much that the pancake is too thick. Cook on each side for about a minute or until golden brown. Cook on low to medium in order to prevent the pancakes from burning.
