500g grated organic carrots
3 certified free range eggs
2 teaspoons organic vanilla extract or vanilla paste
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
300 g almond meal
60 ml extra virgin olive oil
160g maple syrup
1 cup organic raisins
2 teaspoons gluten free baking powder
Preheat your oven to 160 degrees Celsius. In a large glass bowl, combine your grated
carrot, eggs, vanilla, cinnamon, nutmeg, almond meal, oil, maple syrup, raisins
and baking powder. Once mixed, pour into a prepared 20cm baking tin and bake
for 1-1 ½ hours or until cooked through.
Remove from the oven and only turn out once the cake is completely cool.
