About Fennel
Fennel is crunchy and slightly sweet. It is a versatile vegetable adding a refreshing contribution to the ever popular Mediterranean cuisine and is most often associated with French and Italian cooking.
Fennel belongs to the Umbellifereae family and is therefore closely related to parsley, carrots, dill and coriander.

Fennel contains a variety of important phytonutrients. In addition to these phytonutrients, the fennel bulb is an excellent source of vitamin C. Vitamin C is the body's primary water-soluble antioxidant. It is also an immune booster and an important nutrient for the synthesis of collagen (collagen is found in abundance in connective tissue which gives our body form and supports our organs).
Fennel is high in fibre making it a great food for constipation and for lowering cholestrol. It has a reputation for increasing lactation.
