Full of nutrition and very high in protein. Great way to start the day! Simple to make but the kids love the fun!
1 slice wholemeal toast
coconut oil (or olive oil)
Toast the bread and with an egg cup, pierce a hole in the middle of the toasted bread. Heat the oil (coconut is more heat stable than any other fat so is the healthier option) on a fry pan. Place the toast on the pan and break the egg into the hole. Cook egg 2-3 minutes on either side or less if you prefer the egg runny. The left over circle can be put in the frying pan too - the kids love it!
Where possible, try using organic ingredients to ensure chemical free egg in the hole.
