Great to make whenever there are over-ripe bananas.
It's wonderful for breakfast with scrambled eggs or sliced with butter and eaten with the afternoon cup of tea.
3.5 cups of organic unbleached flour
1 tsp bicarb
3 tsp baking powder
1 tsp salt
1.5 cups sugar
185g softened butter
3 organic eggs (beaten)
2 Tbsp lime juice (or lemon if n/a)
about 3 cups mashed bananas
3/4 cup chopped nuts or seeds (linseeds, sunflower seeds, walnuts etc.) OPTIONAL
3/4 cup sultanas (optional)
1 Tbsp vanilla extract
Preheat oven to 190 degrees celcius & grease 2 loaf tins. In a separate mixing bowl, sift flour, bicarb, salt & baking powder together. In the mixer, beat sugar and butter together until pale, add eggs gradually. Add flour mixture & remaining ingredients. Mix well. Spoon evenly into tins and bake for 40-45 mins on mid shelf. Turn out to cool on racks. Freeze one loaf if need be. You'll never look back...
