Date Breakfast Muffins

An easy one to make for a delicious, healthy breakfast. Well worth a go....

Muffin Recipe: Ingredients

  • 1 cup unprocessed bran
  • 1/2 cup ground linseeds
  • 1 1/2 cups wholemeal self-raising flour
  • 1 teaspoon mixed spice
  • 1 1/2 cups chopped pitted dates
  • 1/4 cup brown sugar
  • 1 egg, lightly beaten
  • 3 tablespoons canola oil
  • 1/3 cup golden syrup
  • 1 1/2 cups soy or dairy milk

Muffin Recipe: Method
  1. Place unprocessed bran, ground linseeds, flour, spice, dates and sugar into a large bowl
  2. Combine egg, oil, golden syrup and milk in a bowl.
  3. Pour liquid ingredients into dry ingredients, then mix gently until just combined.
  4. Spoon mixture into lightly greased muffin tins.
  5. Bake in a moderately hot oven for 20 minutes. Serve warm
.
